Me some of my friend went down to Lola's for there happy hour. I was looking over the menu and there it was the good old chicken and waffles. I order my drink and I was still trying to see what I have a taste for there where so many thing that sound so good to me. But I had my mouth ready for those good chicken and waffles. So I put my order in, I was sitting at the bar talking to my friends. OMG 30min goes by and I ask bout my order, and you would never believe what they told me, "where sorry but will not be able to serve chicken and waffles today, because the batter was sticking to the waffle maker and not coming out right". My heart was broken, so I had to make my mind up on something new. Guess what it was, MAC & CHEESE and boy it was so good you should have seen my face.....

FISH
Catfish oh yeah!
So we have this on the menu down at the Marquee for happy hour. People was ordering these left and right I ran out in 2 hours. But I think I will cut the fish smaller because it will look better on the plate. Little golden catfish nuggets on your plate with pickles, onions, hot sauce and toasted bread.

"Nachos"
These are not your everyday nachos, why because its not just any old meat and cheese. Its love out into these nachos. There are call seafood nachos. Shrimp, crab, and lobster meat, all mix in a mornay sauce. Placed on top of fresh chips and topped with a 3 cheese blend and garnish with mix greens, and a lobster claw and lemon wedges.
Pizza
What is your favorite pizza place and way? What do you want on your pizza, the crust, the size and anything extra. Oh boy cause I love Imos with the works. That thin crust and the sauce, so good. But I made a flat bread pizza my way, I call it the St.Louis flat bread.

More Cup Cakes
I know I know you might be brunt out on cups cakes from Chef Tibbs but I gotta give it to you one more time. Ok we have here a Hennessy Cup Cake I made for the boss man at work, and yes he enjoyed it. It was for his birthday hope you like it. Same thing I did to the ciroc cup add the hennessy to the icing and to the cake batter.
Pig
I was in class one day and the chef says, "Today we going to be working with pork". I was like ok, lets get cooking. We walk in class and this what we had to do.....Break a pig down and learn all the parts and know what your eating. That was so cool, I would have never thought that I would be breaking a pig down. I wish I could do it one more time because I have a lot more questions about a PIG.
Salmon
My first time cooking Salmon, and I did it down at The Marquee. My chef told me what to do and I made it happen caption. So here's my first Marquee Glazed Salmon. Seasoned salmon fillet served with rice and sautéed mixed vegetables drizzled with our sweet salmon glaze.
Chicken & Waffle's
Good ol southern food. I just love when I smell that food in the air, man you just want to go all in. But the one dish that I love the most is Southern Chicken and Waffle. It's honey glazed chicken wings, served with a sweet and savory waffle with a side of honey butter and warm maple syrup.
Mama Mia
It's time for pasta oh yeah. I love me some pasta only if it's made just right. Don't really like the jar sauce so I would make my own if not I would doctor it up real good. But I can make a mean Cajun Pasta. Sliced marinated chicken, sautéed lobster and shrimp, seasoned with my home made Cajun blend. With a nice bed of linguini pasta tossed in garlic alfredo sauce
Ciroc Red Berry Cup Cake
So we have this thing at work for those we come in for there birthday. My chef asked me and April if we could come up some cup cakes. Chef wanted us to jazz up the cup cakes and add thing to it or what not. Me and April was coming up with ideas back to back then we got it. We came up with a Ciroc red berry cup cakes, yes it's liquor. We just added to our cream we made and out cake batter. Garnish it with cream cheese icing, fanned strawberry, walnuts and chocolate sauce.

Club Cold Sandwich
The cold weather lastnite had me wanting a club sandwich, so I decided to make some instead of going out and buying one. Gathering all my ingredients I sat in the kitchen and started my creation. First starting off by cooking my bacon to perfection, then slicing my tomatoes, onions, grabbing my lettuce, mayo, chicken breast and ham deli sliced, toasted my bread and began to plate it up. My three lightly toasted pieces of bread lay on the side until I formulated my masterpiece. Bread, mayo, lettuce, tomato, onion, bacon, chicken, ham thats the first layer put a piece of bread in middle; Repeat the same layering on the next piece of bread and tada. Plate it with a nice pickle and or some chips, perfect cold weather club.
Handful Hamburger with cheese
Late nite hunger craze, whats on my mind and tastebuds a nice Juicy Cheeseburger. So i'm up now making a cheeseburger with the fixings lettuce, mayo, ketchup, onions, tomato sliced thin. My mouth was watering something terrible pulling everything out that I need I start to form my pattie then lay it on my skillet to cook. Assembling this work of art is simple though it has to do with taste and layering.Put a little bit of the fat juices form the burger on the top n bottom buns then proceed with mayo spread on both top n bottom buns, next comes ketchup followed by lettuce tomato and onion with a small amount of ketchup on the bottom bun. Finally ready to plate my midnight snack cut my burger in half put some chips on the side.
Ice cream dream blizzards
You know that feeling you get when you want a blizzard but dont wanna leave the house. Best thing to do is to make your own homemade blizzards, all you need is a cup, your your favorite ice cream, favorite cookies, a spoon, sandwhich bag, am mixer of your choice(blender,mix by hand, etc.) your choice of topping(hotfudge,caramel,etc.) and a measuring cup to crush cookies with
After you've gathered everything you need you can start to make your creation:
Step One: put 5-10 cookies in sandwich bag (depending on how big cookies are)and seal closed
Sep Two: proceed to crush cookies with measuring cup
Step Three:put two small scoops of ice cream in a bowl and add a small amount of the topping
Step Four: add a small amount of crushed cookies and two more small scoops of ice cream
Step Five: Use your mixer of choice and mix the ingredients together. If using a blender or mixer set speed on low or knead. If mixing by hand just knead ingredients together with spoon.

Hells Kitchen
Back at it again, so I get to work and things are all bad. There are dirty dishes, sinks, floors, trash left in cans and the biggest thing of all food left out in cooler not labeled or wrapped properly. 3 people in the kitchen the entire night Me, Moe, and Chef, but moe had to leave early due to a 2nd job. Now dont foregt we have no Sous Chef or dishwasher so who's cleaning and doubled up on work? . Chef and I are making food, cleaning dishes, preping, we're doing it all and rocking at it. We still made it out in good time too clocking out at 12am on the dot from all that chaos everything was clean, straightened up nice, and organized; We rocked it on top of being super busy. What a day.
Kitchen Wars
Things got a little rocky in the kitchen today, Chef thinks he can talk to people any kind of way. Telling us we cant be on our phones , but he uses his, no breaks no more than 1 bathroom break, he's very strict on us even though he's younger than us. We're on our feet alot and some of the kitchen staff have kids. But I guess he doesn't understand because he jumps on the line when we don't need him he just does things that aren't neccessary, he hired us to cook hes got it made he shouldnt have to do anything. Just check our work as we send it out and give us respect.
2nd Day Blues
Well its that good ol second day of work. Things are going ok so far I like my gig. We were told to come in at 12 noon and I was the first to arrive upon my arrival I noticed no one was there and the doors were still locked. Immediately I called my Chef and he came right up, we started prep cooking getting things in order; next thing we know its 4pm and service starts in an hour. Still there was no one here no Owners,Servers,Bartenders, etc "I mean no one". We get a call from the owners stating that service doesnt start til 9pm thats when all hell broke loose , we were all so upset, but we chlled out for awhile. Suddenly the Sous Chef walked out and didnt return, so at that point we were out a dishwasher and sous chef. Wow but we made it through the night the downfall was we didnt get off till 2am.

1st Day
First day of work! Yeah I had a great time, I'm a line cook. I work at this restaurant called the Marquee. Just that good feeling of doing something that you love. Chef " J Will" doing his thing in the kitchen, I would like to thank him for giving me a chance to show off my skills. Oh and I got my finger crushed between a pair of tongs, and started bleeding on spot. But it's all good, I cleaned it up and finish up my job. But over all I had a great day. MY FEET HURT!!!!
